What's for dinner?? Roast Lamb with a minted glaze

So I ran (literally - yep I'm that woman!) into woolies. Now I don't usually buy my meat there but I saw a reduced sticker that yelled at me to "STOP!!!!!!" Legs of lamb for $12 each! Mental. I bought 4! 

So, roast lamb with a mint glaze. I actually am not a fan of mint jelly but LOVE this. I'm not only converted to the creepy wobbly condiment but now worried I will never be able to eat a plain roast again. Do yourself a favour and add this to your routine. 

Roast lamb with veggies and gravy (yes you are making the gravy from scratch. No you may not use anything else!)

One roasting leg of lamb 1.8kg
Garlic olive oil and salt and pepper (rub all over the top) 
Stick in a roasting dish on a rack sitting on a tray. 
Fill with water about 2cm but not touching the lamb.
Chop pumpkin and sweet potato and put around the lamb. Chuck in a pre-heated 180 degree oven. 

 
Mint Glaze:
1 jar of mint sauce or jelly
3/4 cup of brown sugar 
Combine and mix on a Medium heat until sticky and delicious 
After about 1.5 hours, glaze the lamb every 5-7 mins for the last half hour. 
Veggies will be cooked.
While the lamb is resting remove the rack that the lamb was sitting on and stick straight on the stove. Turn the stove on so the remaining liquid starts to bubble remove from the heat and add two Tablespoons of flour and whisk. Add a bit of water if you need. Ta daarrrrr. 


Serve with steamed broccoli.

This would easily serve 4 and have left overs for lunch. Based on 4 dinners and two lunches this meal works out to be 
$3 a serve! 
2 hour cook time but could be done quicker.
