Delicious Lamb Cutlets with left over minted gravy
(because it is too good to waste!)
These little beauties
are a "special occasion meat" because they are $49 a kg BUT for two
people for 6 cutlets it was $22.5 and poor hubby had knee surgery today and
they are his fav.
We have next to no
waste in this house so following our roast lamb (I saved the left
over minted gravy) which was the perfect addition to our mash and peas tonight.

Delicious Lamb Cutlets (thanks CHOP)
Serves 2
6 lamb cutlets with a
tad of seasoning or salt and pepper
5 small potatoes
Peas
Left over minted
gravy. (Ummm yum!)
Boil potatoes and mash! I use a whisk to mash with plenty of butter and milk. Add a touch of olive oil at the end it gives it a really smooth texture and whip in!
Meanwhile grill the
cutlets to your liking.
Boil your peas and re-heat your gravy. The longest part is the mash. I normally do cauliflower mash but, again as potato mash is the patients favorite that's what was on the menu!
Per serve the dish
costs about $12 a serve.
Adding the wine however...
Total time in the
kitchen 40 mins primarily due to the potatoes!
