Tandoori Chicken
I promise I will actually "cook" next week!I have been under the pump driving up and down the coast delivering training, so I am very grateful for Chop for making life easier.
This is super easy, chicken takes a while to cook as they are thick pieces, but the quality is so good. The chicken is sweet and the marinade is so yummy. I cooked in a frying pan with a bit of olive oil on low for about 35 mins, next time I will cook them in the oven on 180 degrees for 35mins. Only benefit is you don't have to stand over it to make sure it doesn't burn (I am not patient and get easily distracted).
I had a packet of the brown rice and quinoa mix (90 seconds) in the microwave. Steamed broccoli 1/2 cucumber chopped with a few tomatoes and squirt of lemon juice and salt and pepper to taste. Add a spoonful of natural yoghurt (I added coriander but not necessary) and you have thrown a delicious and healthy meal together.
