Osso Bucco - quick and Delicious

Osso Bucco into "Spag Bol" 2 meals - whoo hoo!

As promised I have actually cooked AND made two meals from one!

It has been so miserable I decided to cook something warming. This is a great meal to cook in bulk to freeze or make quickly. Super great to chuck in the slow cooker and turn on before you leave in the morning so you come home and TADARRRR dinner is cooked (you super human you!). This is one of those meals that make you feel like you are ON fire, nailing life as it looks like so much love and care went into it, when in actual fact it takes little effort and really showcases "ish" cooking ("ish" cooking = when you didn't really have the ingredients and end up either substituting most or all of the ingredients or adding more of one thing as that's what you like!). I promise not to be offended if you add (more wine) or change it up - I encourage you to be your own "ish" chef! 

Basically the ingredients are:
Dash of olive oil
1 kg (about 4 pieces of osso bucco) thanks Chop
Brown onion diced
2 (ish) cloves of garlic
1 stalk of celery chopped 
1 carrot chopped
1 small eggplant chopped
1 red capsicum chopped T of tomato paste
1/2 Cup (ish) of wine - red or white it doesn't matter!
1-1/2 Cups of stock (whatever you have)
1/2 Cup water
1 Can crushed tomatoes
1-2 Sprigs of rosemary (throw in whole it saves you time!)

Lets make life easy...

Put olive oil in a deep based saucepan and brown the meat.
Remove meat and brown the onion. Add garlic, celery, carrot, capsicum, eggplant. cook for a couple of minutes and then add everything else. Stir!

 

 














Add the meat in and simmer away. it will be cooked in 40 mins, however the longer you leave it the better. I was at home all day so had it simmering away for about 4 hours. 

Served with rissoni with a splash of lemon and parsley!

Time anywhere from 40 mins - 4 hours
Prep time about 10 mins

Osso Bucco Style Bolognese

Cooked in less than one episode of the Wiggles :)

Ever feel like the standard "bol" is boring? Don't waste your left over osso bucco sauce add it to your spag bol to make it a bit special. I literally cooked this up in less than 10 mins in the morning between making breakfast (I know this because I started when the Wiggles came on and was finished before it ended!




Onion diced
Garlic to taste 
2-4 bacon diced
1kg mince    
1 can diced tomatoes
Any fresh herbs (basil, parsley) a hand full diced 
Left over osso bucco sauce  
I threw in some left over cherry tomatoes
Slat and pepper to taste 

Pan fry onion, garlic and bacon  and mince and cook up. Add the rest!

This will serve 4 adults with enought for 2 lunches (6 serves)
Cost per serve $2.50
Total time 10 mins! plus cooking time to ensure the deliciousness!
